Raspberry Bellini Ingredients

  • Raspberry Puree – Blend a sweetened raspberry puree for the base of this cocktail. It will give the drink a beautiful pink color too.
  • Prosecco – Top this cocktail with Prosecco, Cava, Champagne, or sparkling wine. Any mildly sweet, bubbly wine works for this drink.

Homemade Raspberry Puree

A puree is simply blended fruits or vegetables. However, this raspberry puree has added acidity and sweetness to enhance the flavor of a cocktail.

  • First, combine a cup of fresh or frozen raspberries with half of a tablespoon of lemon juice and a tablespoon of powdered sugar, or cane sugar, in a small blender or mini food processor.
  • Blend the mixture until completely smooth. Then, strain it through a fine-mesh strainer to remove as many seeds as possible.
  • Store the berry puree in an airtight container in the refrigerator for up to 4 days.
