Chocolate Chip Banana Bread Muffins
These delicious muffins are quick, easy and a great way to use up any extra bananas you may have leftover from the week!
- 3 large bananas over ripe is best
- 1/2 cup white sugar
- 1 egg
- 1/3 cup melted butter I use salted butter
- 1 tsp baking soda
- 1 tsp baking powder
- 1 1/2 cups all purpose flour
- 1 cup chocolate chips
Mash bananas in large mixing bowl.
Add sugar and the egg.
Mix until combined.
Add 1/4 of the chocolate chips, allowing them to rest on top.
Add the melted butter. The heat from the butter will melt the chocolate chips a bit.
Add the flour, baking soda and baking powder. Stir Until well mixed.
Add chocolate chips and stir some more.
Pour batter into muffin tins lined with paper baking cups.
Bake for 15 minutes at 375.
Let cool for at least 10 minutes, then enjoy!
