These chewy Mini Egg Cookie Bars have golden brown edges and a gooey center. The cookie bars are a fun spin on Easter cookies, but thicker and richer. This easy Easter dessert is the perfect way to use any extra mini Cadbury eggs. Prepare them in advance of your Easter time gatherings.

These Easter Mini Egg Cookie Bars are an easy treat. They are perfect for enjoying after hunting for Easter eggs.

Ingredients Needed to Make Mini Egg Cookie Bars

  • Cadbury Mini Chocolate Eggs – These little chocolate eggs are available at most grocery stores and Target stores around Easter. They are perfect for Easter baking.
  • All-Purpose Flour
  • Granulated Sugar
  • Light Brown Sugar – If you prefer a more molasses taste, substitute for dark brown sugar.
  • Butter – Be sure the butter is at room temperature to avoid clumping. If you use unsalted butter, add a pinch of salt to the batter.
  • Egg
  • Baking Soda
  • Baking Powder
  • Salt
  • Vanilla Extract
  • Chocolate Chips – I prefer using mini dark chocolate chips because they ensure a lot of chocolate in every bite. Substitute for milk chocolate chips or white chocolate chips if you prefer.

How to Make Mini Egg Cookie Bars

Bake these Cadbury Mini Egg Bars as a delicious treat after Easter dinner. They are colorful and delicious, the perfect holiday dessert.

Step One – First, combine the room-temperature butter, granulated sugar, brown sugar, and vanilla in a large bowl. Use an electric mixer or stand mixer to cream the butter and sugar together. 

Step Two – Stir the egg into the butter mixture by hand or using an electric hand mixer.

Step Three – In a separate bowl, whisk together the dry ingredients. These are the flour, baking powder, baking soda, and salt. 

Step Four – Then add the mixed dry ingredients to the wet ingredients. Stir, or mix until well combined.

Step Five – Next, chop the mini eggs into small pieces using a large knife. Or crush them with a rolling pin. Add the chopped chocolate eggs and chocolate chips to the dough. Stir them in thoroughly.

Step Six – Transfer the cookie dough to an 8×8 lined square baking pan. Press the dough into an even layer along the pan. Top with whole mini eggs and more crushed eggs.

Step Seven – Bake in a 350-degree oven for 30 minutes. 

The Best Way to Line a Pan for Cookie Bars

Cookie bars can sometimes be a pain to remove from the pan. But with this method, that’s no longer a problem! First, lightly spray an 8×8 baking pan with non-stick cooking spray. Then, cut two pieces of parchment paper into 8″x14″ strips. Lay one piece of parchment paper inside the baking pan horizontally. Then lay the other vertically. The parchment paper should form a cross shape and cover all four sides of the pan.

When the Easter egg cookie bars finish baking, allow them to cool for 10-15 minutes. Then grab the edges of the bottom layer of parchment paper and simply lift out the cookie. Allow them to cool thoroughly before slicing them into squares.

Store these easy Easter cookie bars at room temperature in an airtight container or wrapped tightly in plastic wrap. They will last 5 days to a week like this if you don’t eat them first!

  • 1/2 cup butter softened

  • 1/2 cup crushed mini chocolate eggs
  • 1/4 cup whole mini chocolate eggs

Instructions
 

  • Cream the butter, granulated sugar, brown sugar, and vanilla in a large bowl using an electric mixer or stand mixer.
  • Stir the egg into the butter mixture.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. 
  • Add the dry ingredients to the wet ingredients. Combine thoroughly.
  • Chop the mini eggs into small pieces using a large knife.
  • Mix the chopped chocolate eggs and chocolate chips into the dough.
  • Transfer the cookie dough to an 8×8 lined square baking pan. Press the dough into an even layer along the pan.
  • Top with whole mini eggs and more crushed eggs.

  • Remove from the oven and cool for 10-15 minutes. Grasp the edges of the bottom layer of parchment paper and simply lift out the cookie.
  • Cool for an additional 30 minutes before cutting into bars.
