How to Make a Mermaid Water Cocktail
This is a fun summer cocktail to make at home. To start, fill a hurricane glass or large stemless wine glass about three-quarters full with crushed or pebble ice. The smaller ice adds more dilution to the cocktail. And it looks prettier with the color of the cocktail.
Next, pour 6 ounces of pineapple juice over the ice. The small cans of pineapple juice contain 6 ounces of juice. I like to buy those when making individual cocktails because I only need to open one at a time.
Then add 2 ounces of spiced rum, 1.5 ounces of coconut rum, 2 ounces of blue curacao, and 1 ounce of lime juice. Stir with a straw or cocktail stirrer. The drink will turn a beautiful blue-green.
Garnish the Mermaid Water cocktail with lime slices. Add the lime slices into the drink itself, as well as to the rim of the glass. Pineapple or Maraschino cherries are excellent garnishes for this cocktail as well.

Yes! Mermaid Water is actually an excellent cocktail to make in bulk! It is essentially a punch, so it’s perfect for large gatherings. Use a large pitcher to mix the cocktail with a full-size container of pineapple juice. A large can of pineapple juice contains 46 ounces of juice. So use the whole can, then multiply the other ingredients by 8. That means adding 16 ounces of spiced rum, 12 ounces of coconut rum, 16 ounces of blue curacao, and 8 ounces of lime juice.
Serve the cocktail over ice because it tastes the best cold. But don’t use ice in the pitcher or it will water down the cocktail.
