One of the best parts of Thanksgiving is the leftovers! However, a person can only eat a turkey sandwich so many times. Try making these Thanksgiving Spring Rolls with your holiday leftovers. They are crispy, crunchy, and delicious!

These delicious Thanksgiving Spring Rolls were inspired by my copycat recipe of my favorite snack at Walt Disney World, Cheeseburger Spring Rolls. If you can make delicious Spring Rolls using cheeseburger ingredients, why not make them with Thanksgiving leftovers?! These rolls are stuffed with turkey, mashed potatoes, stuffing, cheese, and cranberry sauce. They are crispy, crunchy and delicious!

If you need an easy way to prepare your Thanksgiving meal, try making a turkey in the air fryer! It cuts down on some of the hassle.

Ingredients for Thanksgiving Spring Rolls

  • Spring Roll Wrappers – These wrappers are thin sheets made from wheat. Spring rolls and egg rolls are typically filled with meat, cabbage, and onion, but they can be made with anything! Find wrappers in the frozen section of most grocery stores, or at your local Asian market. Some are labeled spring roll/ egg roll wrappers.Mashed
  • Potatoes – Leftover mashed potatoes make a perfect base for these rolls.
  • Provolone Cheese – Add a little extra flavor and a cheese pull with some provolone cheese.
  • Stuffing – Leftover stuffing is really what makes these spring rolls the perfect Thanksgiving snack. That distinct flavor is a must.
  • Turkey – Shred or chop the leftover turkey into bite-size pieces to go inside the roll. 
  • Cranberry Sauce – Add a little sweetness to these savory spring rolls with leftover cranberry sauce. It’s the best ingredient to balance the flavors.
  • Gravy – Heat up leftover turkey gravy to use as a dipping sauce. These Thanksgiving Spring Rolls taste great without a sauce too!
  • Leftover Veggies – Add green beans or brussels sprouts to the filling for a little extra crunch and to get in your vegetables. (These delicious spring rolls combine all of the elements of a traditional Thanksgiving spread, so feel free to include your favorite dishes as filling ingredients.)

How to Make Thanksgiving Spring Rolls

These fun Thanksgiving Egg Rolls combine your favorite Thanksgiving food with cheese for a great snack. They are the perfect way to enjoy your leftovers!

Step 1 – First, lay out a spring roll wrapper on a cutting board. Arrange the wrapper at an angle so it looks like a diamond shape instead of a square. 

Step 2 – Next, spread a thin layer of mashed potatoes across the center of the wrapper. Top the potatoes with strips of provolone cheese. 

Step 3 – Add the stuffing, turkey, and cranberry sauce over the potatoes and cheese. 

Step 4 – Next, roll the spring rolls! First, fold half of the wrapper over the toppings. Wet the point of the wrapper with a bit of water from your finger to help it stick.

Step 5 – Fold in the sides of the wrapper. Use water to help the wrapper stick here too. 

Step 6 – Finally, roll up the spring roll. Use water to secure the final corner of the wrapper.

Step 7 – Brush each Thanksgiving Spring Roll with olive oil or vegetable oil, then place them in the air fryer. Be sure to preheat the air fryer to 400 degrees Fahrenheit. 

Step 8 – Air fry the spring rolls at 400 degrees for 10 minutes. Then flip the rolls over, brush with more oil, and air fry for another 5 minutes. 

Step 9 – Flip the spring rolls over again and air fry for another 5 minutes. This helps the rolls crisp up even more!

Step 10 – Serve the Thanksgiving Spring Rolls with leftover gravy or cranberry sauce for dipping.

How to Store Leftover Thanksgiving Spring Rolls

Honestly, I don’t recommend storing leftovers spring rolls. They’re made with leftovers that have already been reheated and refrigerated at least once. Reheating and storing food repeatedly compromises the safety of eating leftovers. Safe storage also depends on how many days you store the original leftovers.

These turkey spring rolls are the most delicious way to snack on Thanksgiving dinner leftovers the next day! Serve them at your day-after family gathering or as a snack after Black Friday shopping.
