Creamy Enchiladas

In this house one type of dish never fails, Mexican. We love tacos, burritos, quesadillas, you name it! Surprisingly, I’ve never made enchiladas before though, which is ridiculous. I decided to fix that this week in celebration of Jesse starting grad school, plus he needed a break from always cooking dinner. 😉 As usual I adapted a recipe to fit my and Jesse’s tastes.

Ingredients
– 3 Boneless, skinless chicken breasts, cubed
– 1/2 onion, diced
– 1/2 red onion, diced
– 3/4 green pepper, diced
– 1 jalapeno, diced
– 8 oz. taco sauce
– 12 oz. sour cream
– 2 cups shredded cheese
– 1 can tomato sauce
– 1 can black beans, drained
– Garlic powder
– Chili powder
– Ground cumin
– Dash of paprika
– Cayenne pepper
– Cilantro

Let’s Get Cookin’
– Preheat oven to 350 degrees F (175 degrees C)
– In a medium, non-stick skillet over medium heat, cook chicken until no longer pink and juices run clear. Drain excess fat. Add the onions, peppers, and black beans. Once the veggies are cooked a bit add the sour cream, cheese, and ground black pepper. Heat until cheese melts. Stir in salt, tomato sauce, chili powder, cumin, cayenne pepper, garlic and cilantro.
– Roll even amounts of the mixture in the tortillas. Arrange in a baking dish. Cover with taco sauce and 3/4 cup cheese. Bake uncovered in the preheated oven 20 minutes. Cool 10 minutes before serving.
– Be prepared for your house to be filled with the delicious smell of cheesy goodness!enchiladas

Serve with a little cilantro garnish and a cold Corona and enjoy!

  1. Mexican is always a winner with us too. I make white chicken enchiladas a lot. Basically, fill the insides with chicken, sour cream, cream cheese, green chiles, and cilantro. Then I mix sour cream with salsa verde for the sauce on top. Top with whatever you want – avocado, green onion, more cilantro, etc. Delish!!

  2. holy YUM. I used to make a enchilada dish from Men’s Health (random I know) and it was super good and healthy. I should pull that out again. And definitely try this.
