If you follow me on Instagram, then you may have seen that I went to a launch party for a friend’s cookbook a few weeks ago. My friend Liz, of I Heart Vegetables, wrote a cookbook called The Truly Healthy Vegetarian. It’s full of amazing recipes, whether you’re vegetarian or not! The event was held at a local juice and smoothie place called Ginger Juice. They served these amazing Coconut-Mango Smoothies from the book and I have been craving them ever since. Which is a little odd because I’m not usually a smoothie, coconut or mango fan! I don’t know if it’s due to pregnancy hormones or what, but since I’ve been so obsessed I wanted to share the recipe with you all. Plus, I couldn’t resist the opportunity to brag about being friends with a published author. 😉
The best thing about this recipe is how simple and straight-forward it is. 1 cup of ice, 1 cup of frozen mango, 1 cup of frozen pineapple, 1 cup unsweetened coconut (or almond) milk go in the blender and then you top it with unsweetened shredded coconut and chia seeds (if you want). Bing. Bang. Boom. In 5 minutes you have a healthy, refreshing, and delicious treat. Mara loves these Coconut-Mango Smoothies too, so her and I will be enjoying them regularly this summer! They make such a quick and simple treat and are perfect for this busy mama!
The Truly Healthy Vegetarian Cookbook is full of other tasty dishes as well. I can’t wait to dig in and try a few more! Or maybe I’ll get my husband to do the cooking since he’s still home on paternity leave… 😉
Coconut-Mango Smoothies from The Truly Healthy Vegetarian Cookbook
- 1 cup ice cubes
- 1 cup frozen mango chunks
- 1 cup frozen pineapple chunks
- 1 cup unsweetened coconut milk or almond milk
- 2 tbsp unsweetened coconut flakes
- 1 tbsp chia seeds optional
- Blend the ice, mango, pineapple, and coconut (or almond) milk in a blender until smooth.
- Divide between two glasses and sprinkle with the coconut flakes and chia seeds (if using).
