These delicious Chocolate Chip Banana Bread Muffins are quick, easy, and a great way to use up any leftover bananas. They are perfect for a breakfast on the go, or a sweet treat in the evening.
When I became a mom one of the many things I looked forward to doing with my kids was baking. This is funny because I’m not really much of a baker, though it is growing on me.
These pumpkin scones and pumpkin spice chocolate chip cookies are also favorites!
A few weeks ago, after seeing kids bake on several of her favorite TV shows, my oldest asked me if we could bake. I said why not and pulled out one of the easiest recipes I had, Chocolate Chip Banana Bread Muffins. This was perfect because Daniel Tiger helps bake banana bread muffins sometimes, so she was super excited.

I prepped all of the ingredients and laid them out on the dining room table so it was easy for her to dump them into the mixing bowl as we went. I learned this technique from one of my favorite parenting books, Bringing Up Bebe (affiliate). (Find my other favorite parenting books here.)
Since the recipe only calls for flour, sugar, baking soda, baking powder, an egg, and butter, plus bananas and chocolate chips, I didn’t really dirty any extra dishes doing things this way. Plus it was easier than having her scoop out the ingredients herself.

We helped her mash the bananas, but she got to dump in the egg and sugar herself. Next, she sprinkled in 1/4 of the chocolate chips. I poured in the butter since the dish was still hot from melting. Then, we let her pour in all of the dry ingredients. I mixed the flour, baking soda, and baking powder together into one bowl just to keep the process quick and easy. This is key when baking with a two-year-old.
My daughter loved pouring in all the ingredients herself, but hands down her favorite part were mixing. Well, mixing and picking chocolate chips out of the batter and eating them.

Once everything was well mixed, we added the remaining chocolate chips. Then we gave it another good stir and poured the batter into the baking cups. They only take 15 minutes to bake at 375. Perfect for that short toddler attention span!

These Chocolate Chip Banana Bread Muffins are absolutely delicious and so easy to make. I may or may not have been making them weekly with my daughter and then eating the whole dozen in just a few days…
