These Homemade Buffalo Chicken Pizza Rolls Are So Delicious!
Buffalo Chicken Pizza is already a popular type of pizza at many restaurants and in the frozen food section. The flavors of spicy buffalo sauce, Ranch dressing, and chicken pair well with mozzarella cheese. These rolls have all of that same flavor but are rolled up into a circle. You can eat these with one hand and easily dip them!
Make these homemade pizza rolls using store-bought pizza dough, ground chicken, and shredded mozzarella. They are easy and affordable.

Ingredients for This Buffalo Chicken Pizza Rolls Recipe
- Ground Chicken – Ground chicken is a great option for these pizza rolls because it is affordable and easy to cook!
- Cream Cheese – This gives the buffalo chicken filling a creamy texture and tangy flavor.
- Buffalo Sauce – You can’t have buffalo chicken without buffalo sauce! Use your favorite hot sauce. Personally, I use Frank’s Red Hot Original Sauce.
- Ranch Dressing – Creamy ranch dressing adds another depth of flavor to buffalo dips! It helps calm the spiciness of the buffalo sauce and makes it even creamier.
- Shredded Mozzarella Cheese – Most chicken buffalo dips use cheddar cheese, but since this is a pizza roll we’re using mozzarella. This adds more of that traditional pizza flavor! Shredded is best for this recipe because it melts more easily.
- Pizza Dough – You can’t have a pizza without pizza dough! Make your own dough, or purchase a prepackaged dough at the grocery store. Many grocery stores carry dough near their bakery departments. Pillsbury also makes a pizza dough in the can. They have regular crust and thin crust. I like the Pillsbury thin crust best for these rolls because they create crispy pockets of pizza crust.
How to Make Buffalo Chicken Pizza Rolls
These Buffalo style chicken pizza rolls snacks are full of the craveable flavor of Buffalo chicken wrapped in a delicious golden crust. They are a real crowd-pleaser!
Step 1 – Warm a tablespoon of olive oil, or vegetable oil, in a skillet over medium heat. Add the ground chicken and brown it in the skillet.
Step 2 – Reduce the heat to low or medium-low and add the cream cheese, shredded mozzarella, Buffalo sauce, and Ranch dressing. Stir until the cheeses melt completely.

Step 3 – Preheat the oven to 425 degrees.
Step 4 – Roll out the pizza dough into a 1/4-inch thick rectangle. The canned dough is easiest for this because it already comes in a flattened rectangle.
Step 5 – Spread the buffalo chicken mixture over the pizza dough in an even layer.

Step 6 – Roll the dough horizontally to form a log. Horizontally means rolling from side to side, so the log would be the same length as the long sides of the dough.
Step 7 – Cut the roll into circles about 2″ thick. Place them in a baking dish that’s been sprayed with cooking spray. Top with grated Parmesan cheese or garlic powder if you wish.
Step 8 – Bake at 425 degrees for 10 minutes, or until the tops of the pizza rolls are golden brown. The safe internal temperature for this great snack is 160 degrees.

Step 9 – Top the Buffalo Chicken Pizza Rolls with a drizzle of Buffalo sauce, a drizzle of Ranch dressing, and sliced green onions. Serve with a tasty dipping sauce, like Buffalo sauce or Ranch dressing!
Pop The Roll in the Freezer for Easier Cutting!
The hot chicken buffalo filling may warm up the dough and make the rolled pizza log difficult to cut. If you’re having a hard time cutting the roll, place it in the freezer for about 5 minutes to firm up the outside of the dough. This makes it easier to cut. And the rolls will look more attractive if they maintain their circular shape.

For food safety, do not store reheated pizza rolls a second time!
Honestly, mine don’t always turn out pretty and round! Sometimes they look like an absolute mess! But they are still delicious! Don’t sweat it! Try the freezer trick next time.
Another tip is to use unflavored dental floss to cut the pizza rolls! This helps them maintain their shape!

Substitutions
Yes, shredded chicken is a great alternative to ground chicken. Especially if you have leftover chicken! Shred the leftover chicken and warm it in a skillet with the cheeses and sauces on medium-low heat. Leftover roasted diced white chicken meat is also a great alternative!
If you prefer blue cheese, then definitely use it! I’m not a blue cheese fan, so I prefer Ranch.
The “laziest” way to make this recipe is to use a store-bought buffalo chicken dip as the filling instead of making your own. It will completely cut out the 20 minutes of prep time.
If you use a cold, premade buffalo dip, spread it evenly over the pizza dough. Then sprinkle the mozzarella cheese over that layer. Then roll up and cook according to the directions on the recipe card.
