Buffalo chicken dip is a popular dip to serve at parties or on game day. These buffalo chicken bites combine this popular dip with a crispy crust. They are less messy and there are no worries about double dippers!

How to Make Buffalo Chicken Bites

These tasty buffalo chicken bites are a great appetizer for parties. It’s everyone’s favorite dip, contained within its own cup. Perfect for mess-free eating!

First, create a delicious buffalo chicken dip. This step takes about 20 minutes to make the dip from scratch. If you are in a hurry, try a prepackaged dip! Many grocery stores also sell buffalo chicken dip near the deli counter. It’s an excellent solution if you’re crunched for time!

Instructions for Buffalo Chicken Dip

This is the best recipe for Buffalo Chicken Dip made with Frank’s Red Hot Original buffalo sauce.

The recipe makes over 3 dozen bites. Half of the recipe makes about 20 bites. Adjust the recipe based on your party size. For my buffalo chicken bites, I cut the recipe in half.

To make buffalo chicken dip, preheat the oven to 350 degrees. Add 4 oz of cream cheese to a glass baking dish. Allow it to soften in the oven for about 5 minutes. Then add half of a pound of shredded chicken, 1/4 cup of Ranch dressing, 1/4 cup of Frank’s Red Hot Original buffalo sauce, and 4 oz of shredded cheddar cheese to the baking dish as well. Mix all of these ingredients until every ingredient is evenly distributed. Bake for 20 minutes at 350 degrees.

Then remove the dip from the oven and set it aside to cool for about 5 minutes.

Assemble the Buffalo Chicken Bites

After the dip is finished, it’s time to assemble the bites! The base of these bites is phyllo pastry cups. They come frozen from the grocery store. Since these cups are baked in the oven, they don’t need to thaw ahead of time.

Place the cups on a baking sheet or a mini muffin pan. I prefer the mini muffin pan so the cups don’t slide around as you transfer them to and from the oven.

Then fill each cup with the buffalo dip. Sprinkle a bit of cheddar cheese over each cup. Then bake at 350 degrees for 5-8 minutes. Long enough to melt the cheese on top and crisp up the phyllo cups.

Remove the bites from the oven. Allow them to cool for about 2 minutes. Then garnish the tops with a tiny drizzle of Ranch dressing or sour cream. And a few pieces of chopped green onion.

Transfer the bites to a serving dish, plate, or cheese board. Serve the bites alone on a platter. Or add them to a larger snack board for a fun presentation.

How to Store Buffalo Chicken Bites

Store these buffalo chicken bites in the refrigerator for 1-2 days. To reheat them, bake them for 5-8 minutes in the oven at 350 degrees. Or reheat them in the air fryer at 350 for 3-5 minutes. Until the cups are crispy and the dip is warm throughout.

These bites are also great for freezing! Freeze a batch immediately after filling the cups with dip. I recommend using an airtight Tupperware container. Store them in the freezer for up to 3 months. And since these are open-face bites, don’t stack them directly on top of each other. Separate layers using a sheet of parchment paper.

Do not freeze already baked buffalo chicken bites. They will be too soggy and not reheat well. And don’t thaw frozen bites either. Transfer them directly from the freezer to the oven or air fryer. Otherwise, they get soggy! Increase cooking time to 12-15 minutes in a 375-degree oven. Or 10+ minutes in the air fryer. Cook thoroughly and check for cold spots before serving!

Instructions
 

  • Place the phyllo cups on a baking sheet or a mini muffin pan.
  • Fill each cup with buffalo chicken dip.
  • Sprinkle cheddar cheese over each cup.
  • Bake at 350 degrees for 5-8 minutes. Until the cheese is melted and phyllo cup edges are crunchy.
  • Remove bites from the oven. Cool for 2 minutes.
  • Garnish the tops with a drizzle of Ranch dressing or sour cream and green onion.
